- 2 tsp oil
- ½ an onion - chopped
- 2 tsp Italian Seasoning
- 2 garlic cloves - chopped
- 200 gms tomatoes chopped skinless and deseeded
- 1 tsp Chilli flakes
- 2 tbsp Tomato ketchup
- 1/4 tsp Sugar
- Salt - to taste
- 3 hard-boiled eggs
- 2 sausages cut into ½ inch pieces
- ¼ cup water
- ½ cup mozzarella cheese
- In a pan heat oil. Drop in the garlic, chilli flakes and oregano and saute for about 30 seconds.
- Then add the onions and sautee until translucent followed by tomatoes, sugar and salt.
- Add the tomato ketchup and water. Cook the mixture on medium to low heat to attain a saucy consistency.
- Meanwhile, preheat the oven to 200℃.
- After the sauce is done, add it to a baking dish, crack in your eggs, add the sausages and top with cheese.
- Bake for 4 -5 min. Serve hot with toast.
