Instructions
  1. Heat ghee in a kadai or a nonstick pan. Add the eggs and fry until slightly blistered and golden. Remove and place the eggs on a plate. Sprinkle Asli Garam Masala and red chilli powder.
  2. Heat 2 tbsp of oil and add the cardamoms, cinnamon, and bay leaf.
  3. When they start to sizzle, add the green chilli, and the onions. Sauté the onions until soft and translucent.
  4. Add the ginger-garlic paste and sauté for about a minute.
  5. Add the tomatoes and sauté until they turn mushy.
  6. Add the turmeric, red chilli powder, coriander powder, Asli Garam Masala, sugar, and salt. Sauté until fragrant and well combined.
  7. Pour water as required and mix well. Cover the kadhai and cook until the gravy thickens, and the oil floats on top.
  8. Add the boiled eggs and the Kasuri methi. Mix well and simmer. Garnish with coriander leaves.
  9. Serve hot with rice, roti, or naan.
