Instructions
  1. Break fresh Licious eggs into a bowl and beat them.
  2. Put a pan on a medium-high flame and then heat just enough cooking oil to scramble the eggs.
  3. Cook eggs until scrambled. Do not overcook. Keep them aside.
  4. Again, heat cooking oil in the pan, add the finely chopped garlic to it and cook until it turns light golden.
  5. Add a tsp of red chilli, ginger and spring onion, and saute for a minute on high flame.
  6. Add the soy sauce to it.
  7. Now pour in the 2 cups of cooked leftover rice and then another beaten egg.
  8. Mix well with the ingredients gently so that the rice doesn’t break.
  9. Add black pepper powder and salt and blend thoroughly.
  10. Add some finely chopped spring onion once again to the rice and then stir fry for a minute.
  11. Transfer the hot, spicy fried rice to a bowl.
  12. Garnish with spring onions and serve hot.
