Instructions
  1. For the marination, take a clean bowl and add 1 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp rice wine, 2 tbsp cornstarch, and water. Mix them all.
  2. Add the boneless chicken cubes to this mixture and coat the chicken cubes well. Keep the marinated chicken cubes aside for 30 minutes.
  3. To prepare the sauce, add 1 tbsp rice wine, 1 tbsp sesame oil, and 1 tbsp soy sauce, vinegar, sugar, and red chilli paste in a small bowl. Mix well and set it aside.
  4. Add 2 tbsp of sesame oil (or any other cooking oil) to a pan and heat it. Then, add the marinated chicken and stir fry until it is just cooked and turns white. Remove the chicken from the pan and set it aside on a plate.
  5. Now, add the chopped garlic, peanuts, spring onions, and water chestnuts to the same pan and saute them. Then add the sauce prepared earlier and mix well. Add water and adjust the consistency as per your preference.
  6. Once the aroma of the sauce fills your kitchen, toss the stir-fried chicken pieces into it and mix them well till the chicken soaks in all the flavours.
  7. And that is it! Your kung pao chicken is ready. Serve hot with rice for the best experience.

Tips and Tricks Make sure you do not overcook the chicken or the sauce. Keep the flame low while cooking the sauce. Serving Suggestions Garnish it with some peanuts or basil leaves.
