Combine the flour and salt in a large bowl. Make a well and pour in the boiling water. Stir until a dough forms. Remove the dough onto a floured work surface and allow it to cool slightly.
Knead the dough until smooth. Cover with a kitchen towel and rest for 30 minutes.
Preheat the oven to 190°C.
Place a large non-stick pan over medium-high heat.
Pat the chicken dry with a paper towel. Season with salt and five spice.

Place a pan over medium heat.
Dust a work surface with flour.
Cut the dough into equal pieces, cover and keep aside.
Slightly flatten a piece of dough into an oval shape.
Scatter a teaspoon of green onions to cover the flattened dough.
Roll the dough to form a cylinder. Gently press the dough again to create a small disc.
Place the filled dough under the kitchen towel to rest until you prepare the rest.
Roll out the disc-shaped dough into a thin circle and oil both sides with sesame oil.
Add each dough to the heated pan and cook for 30 seconds on each side.
Place each cooked dough under a kitchen towel to keep it warm.
To serve, slice the chicken into 1 cm thick slices.
Transfer to a platter with the pickles and green onion pancakes.
