Chicken Changezi is a royal, Mughlai dish that gives you juicy chicken pieces drenched in a delicious creamy gravy. Combine all marinade ingredients except yoghurt and tomato puree. Marinate the chicken for 45 minutes. After that add yoghurt and tomato puree and marinate for another 30 minutes.
In a wide pot, heat oil over medium flame, sauté onions and cashews until onions become translucent. Turn off the stove and grind them into a fine paste with some water once the onions cool down. In the same pan, add oil, asafoetida, cumin seeds, bay leaves, dry red chillies and black cardamom. Sauté for a minute.
Add the blended onion-cashew paste and sauté for a minute. Add all the other spices and stir fry. Then add tomatoes and cook until the mixture releases oil.
Add the marinated chicken along with 1 cup of water, stir well. Cover and cook for 25-30 minutes over low-medium heat. Once done, add cream, mix well and cook again for 10 minutes.
Sprinkle coriander leaves on top to garnish it and serve hot with rice or naan.
The recipe involves bone-in chicken; however, you can also use boneless chicken. For best melt-in-the-mouth result, cook the chicken on low heat.
