  1. Take a frying pan and heat ghee in it.
  2. Once heated, add the chopped onions and potatoes. Keep stirring.
  3. Once the onions turn translucent, proceed further.
  4. Take a bowl and crack the eggs in it. Add cream and salt. Whisk it well.
  5. Now, go back to the pan. Add the tomatoes and green chillies once you think the onions are cooked.
  6. Mix them all well. Stir for 2-3 minutes.
  7. Pour the beaten eggs into the pan very slowly. Do that on low flame.
  8. Once you see the eggs have started cooking, stir them well.
  9. Cook for 5-6 minutes. Do not overcook the eggs. Classic Akoori is runny and gooey, so make sure you get this consistency. Serve hot!
